If you are looking for a delicious appetizer to make for your next party or family event, I think you will enjoy the following two recipes. You can use a crock pot as stated in the recipe or do them completely stove-top over low heat. If desired, you can make them up 1 day ahead of time and then refrigerate in a sealed container. When you are ready to serve them, reheat in the microwave, stove top or in your slow cooker pot. Serving Suggestion: You can place them onto short skewers or toothpicks to serve. I suggest keeping them warm until serving time. Sweet 'N Sour Meatballs 3 lbs. lean ground beef 1/4 cup dried bread crumbs 1 egg 1 box Lipton onion soup mix 2 bottles of catsup 1 small jar current jelly In a large bowl, combine the onion soup mix, bread crumbs, ground beef and egg together until ingredients are well combined. Form the mixture into 1" to 1 1/4" diameter balls. In a large skillet, brown your meatballs over low heat. Stir in the catsup and current jelly, which makes your sauce. Continue simmering over medium heat for 8-10 minutes and then transfer them along with the sauce to a crock pot. Place in crock pot on the low heat setting and continue to cook for an additional hour. Swedish Meatballs With White Sauce To Make The Sauce: 3 tablespoons butter or margarine 3 tablespoons all-purpose flour 1/2 cup beef broth 1 1/2 teaspoons dill 3/4 teaspoon table salt dash of nutmeg 1/2 cup sour cream In a medium-sized saucepan, heat butter until it has melted. Stir in the flour and continue to stir until its smooth. Stir in the beef broth, dill, salt and nutmeg and bring to a boil and boil for 1 minute. Remove from heat and stir in the sour cream. To Make The Meatballs: 2 lbs. lean ground beef 1/4 cup dried bread crumbs 1 egg 2 tablespoons finely chopped onions 1/4 cup catsup In a large bowl, combine the ground beef, dried bread crumbs, egg, chopped onions and catsup together until well combined. Shape into 1 1/2" diameter balls. In a large frying pan, over medium heat, simmer the balls until they are browned on all sides. Transfer the meatballs and white sauce to a crock pot and combine together. Set the dial on low heat and simmer for 1 to 1 1/2 hours and then turn the dial to the keep warm setting.
