Did you know that you can make delicious fudge quickly and easily by using your microwave? Using your microwave to make fudge, can give you some terrific fudge making results. Here are a few tips. 1. Use a wooden spoon or a silicone mixing spoon. 2. Use a proper microwave-safe container. Just because a container is made of plastic doesn't mean its microwave safe. 3. Let your fudge cool completely, before cutting it into squares. Store fudge in an airtight container. Here are 3 of my favorite microwave fudge recipes. Classic Chocolate 1/2 c. cocoa powder 1 pound confectioner's sugar 1/2 c. butter 1/4 c. milk 1 tsp. of vanilla Mix the cocoa powder and confectioner's sugar in a microwave-safe dish. Slice butter into sections, place on top. Pour on milk but do not mix. Cover; cook for 2 minutes at full microwave power. Add vanilla, stir to mix well. Pour into a greased 8" square pan. Chill for 90 minutes until firm. Cut into squares, makes 64 pieces of yummy fudge! Rocky Road 2 c. semi-sweet chocolate chips 1 can (14 oz) sweetened condensed milk 1 tsp. vanilla extract 3 c. miniature marshmallows 1 1/2 c. finely chopped walnuts Place morsels and sweetened condensed milk in a microwave-safe dish. Microwave on high for 1 minute. Stir. Morsels may retain some of their shape. If necessary, microwave an additional 10-15 seconds until melted and smooth. Stir in vanilla extract. Fold in miniature marshmallows and nuts. Press mixture into prepared baking pan. Refrigerate until ready to serve. Chocolate Pecan 2 lb. confectioners sugar 2 Tbsp. vanilla 1/2 c. evaporated milk 1 c. butter 1 c. chopped pecans 1 c. cocoa powder Blend sugar and cocoa in microwave-safe dish. Add milk and butter. Do not stir. Microwave on high for 4-6 minutes. Stir in vanilla and nuts. Stir until blended. Pour into a square baking dish. Refrigerate until set.
