3 Summertime Fruit Salsa Recipes

When I think of summertime, I think of family picnics and barbecues with family and friends. One of the things I look forward to is my sister's fruit salsas. Over the years, she has taught me a few things about making salsa that I would like share with you.

1. Buy your fruits and vegetables fresh. Use them within 3 days of purchase. Chop them all the same size, this will give your salsa a consistent appearance.

2. Refrigerate in a sealed bowl for 2-4 hours before serving. This will allow the flavors to infuse.

Here are 3 easy recipes that you can make and enjoy at your next family gathering.

Mango Papaya

1 mango, diced
1 papaya, diced
1 red or green bell pepper, diced
1 avocado, diced
1/2 c. onion, diced
2 Tbsp. cilantro, chopped
2 Tbsp. balsamic vinegar
salt and pepper to taste

In a large bowl, toss mango, papaya, bell pepper, avocado, sweet onion, cilantro, and balsamic vinegar. Add salt and pepper to taste.

Zesty Watermelon

2 c. watermelon, chopped
2 tbsp. onion, finely chopped
1/4 c. green pepper, finely chopped
2 tbsp. vinegar
1/4 tsp. garlic powder
salt to taste

In a medium bowl, combine all ingredients and mix well.

Mango Lime

2 ripe mangoes, diced
4 tomatoes, diced
1 lime, diced
1/4 c. cilantro, chopped
1/4 c. lime juice

In a large bowl, combine all of the ingredients and toss. In a large sauce pan cook ingredients for 10 minutes over low heat. Let cool for 20 minutes before placing into a bowl.
