As busy moms, during the week we usually look for quick breakfast foods to feed our families, before they rush out the door to go to school or to work. When the weekend arrives, I like to take the time to prepare something hot and delicious. These casserole recipes are easy to prepare and are made from ingredients you most likely have on hand. If time is an issue, you can prepare the recipe the night before and refrigerate. When morning arrives, pop it into the oven and it's on the table in less than 45 minutes. Cheesy Bacon Breakfast 3 slices cooked bacon, crumbled 3 large eggs, beaten 1 cup milk 3/4 cup shredded cheddar cheese 12 oz. bag frozen hash browns Place frozen hash browns in a greased 9 x 13" baking dish. In a medium bowl, combine milk, eggs and 1/2 cup cheese; pour over hash browns. Sprinkle crumbled bacon and remaining 1/4 cup cheese on top. Bake at 375 degrees for 35-40 minutes. Cheesy Egg 2 cups plain croutons 4 oz. shredded cheddar cheese 4 eggs 2 cups milk dash of pepper 1/4 teaspoon onion powder 1/2 teaspoon mustard Mix croutons and cheese, put into a buttered casserole dish. In a blender container, combine eggs, milk, pepper, onion powder and mustard. Pour mixture over croutons and cheese. Bake at 325 degrees for 45 minutes. Spinach, Ham and Egg 1 (10 ounce) box frozen chopped spinach 1 (15 ounce) can cheddar cheese soup 1 tablespoon mustard 1/2 lb. ham, cut into cubes 4 hard boiled eggs, chopped Preheat oven to 350 degrees. In large saucepan, cook spinach according to package directions, drain well. Stir in soup, mustard and ham. Pour into a baking pan, top with eggs. Bake 15-10 minutes.
