As a busy mother and wife, I often look for recipes that are easy to prepare and take 5 ingredients or less to make for my family. Over the years, I have collected the following recipes from various family members. The following vegetable side dishes are a hit with my children and the adults in my family. Some of them can be made up a day or two ahead of time and then just reheated in the microwave. You can season any of them with salt and black pepper if desired. Note: I prefer baking in glass casserole dishes, however, you can use whatever baking pans that you like to use. If you are worried about sticking, you can lightly spray your baking dish with nonstick vegetable spray. Rutabaga and Apple Delight 1 medium rutabaga, peeled and cubed 1 medium apple, peeled, cored and sliced 1/3 cup brown sugar 2 tablespoons butter, softened Cook rutabaga in boiling water until done; drain well. Place half of the rutabaga and half of the apple in a 2 quart casserole dish. Sprinkle with half of the brown sugar; dot with a pat of butter. Repeat layers. Bake covered in a 350 degree oven for 25 minutes or until done. Serve immediately. Cheesy Cauliflower 1 medium head of cauliflower 1/2 cup mayonnaise 1 1/2 teaspoons yellow or Dijon mustard 3/4 cup shredded American or Cheddar cheese Prepare and cook the whole head of cauliflower and then drain well in a colander. Place cooked cauliflower in a large glass baking dish In a small bowl, combine together the mayonnaise and mustard. Pour mixture over the cauliflower and top with the shredded cheese. Bake in a 350 degree oven for 8 minutes or until cheese has melted. Scalloped Potatoes 4 cups sliced potatoes 1 medium onion, sliced 1 can cheddar cheese soup 1/2 cup milk a few pats of butter or margarine optional - salt and pepper to taste Layer your sliced potatoes and sliced onions in a 2 quart glass casserole dish. Mix cheddar soup and milk together, pour over potatoes and onions. Dot the top with butter. If desired, you can sprinkle on some salt and black pepper. Bake in a 375 degree oven for approximately 45 to 50 minutes or until done.
