When it comes to making homemade eggnog for my holiday parties, I am always leery of recipes that utilize fresh uncooked eggs. However, the following recipe requires you to slowly cook your eggs on the stove top before mixing in the rest of the ingredients. Once you have completed the recipe, you will need to chill your eggnog in the refrigerator for approximately 3 hours to allow it to set up. Right before serving time, you will need to complete the last step before pouring it into your punch bowl. This rich and creamy eggnog will serve approximately 10 to 12 people. Holiday Eggnog Recipe 12 large eggs 1 1/4 cup granulated sugar 1/2 teaspoon table salt 1 teaspoon ground nutmeg 2 quarts cold milk 1 cup dark rum (optional) 2 tablespoons vanilla extract 1 cup heavy whipping cream In a large saucepan, using a wire whisk, beat the eggs. Slowly add in the granulated sugar and salt until all 3 of the ingredients are well blended. Gradually stir in half of the milk (1 quart) and cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon. This will take approximately 25 minutes. Your mixture should reach 160 degrees F, but don't let it come to a boil as that will scorch it. Pour the mixture into a large mixing bowl and stir in the dark rum, vanilla extract, ground nutmeg and the remaining milk. Cover the bowl and place into the refrigerator until well chilled. (This will take 2 to 3 hours). In a small mixing bowl, use an electric mixer set at medium speed, beat the heavy whipping cream until soft peaks form; gently fold the whipped cream into the chilled custard mixture. Pour the eggnog into a large 5 quart punch bowl and sprinkle ground nutmeg on top.
