Weekend Breakfasts - 3 Scrumptious Pancake Recipes

As a busy mother, wife and grandmother, I don't have time during the week to cook big breakfasts for my family. When the weekend finally rolls around, I look forward to getting up early in the morning and preparing a nice hot breakfast for my family.

We enjoy delicious pancakes made from scratch, omelets, egg casseroles, waffles, egg and cheese burritos and of course, all of those yummy sides like ham, bacon and toast.

The following pancake recipes were given to me many years ago and to this day, we still enjoy making them every few weeks. You can top them with melted butter, your favorite syrup or with some confectioner's sugar.

Potato-Cakes

2 tablespoons butter
2 eggs
1/4 cup milk
2 cups uncooked potatoes, finely shredded
1/4 cup Bisquick baking mix
1 teaspoon salt

In a large skillet, melt the butter over low heat. In a large bowl, beat together the eggs, milk, uncooked shredded potatoes, baking mix and salt. Using a large spoon, drop some batter into your hot skillet over medium heat. Simmer for about 3 minutes on each side until golden brown.

Apple Pancakes Casserole Style

2 apples, peeled, cored, and sliced
1 cup all-purpose flour
1 cup milk
6 eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
2 tablespoons butter

Using a blender, mix together the flour, milk, eggs, vanilla extract, salt and nutmeg and set aside. In a large skillet, melt the butter over medium heat. Add the sliced apples and fry 2 to 3 minutes. Place the apples in a rectangular baking dish and pour the batter over top. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees for 8 to 10 minutes. Sprinkle with powdered sugar. Cut in wedges and serve immediately.

Yogurt Pancakes

1 cup plain yogurt
2 eggs, separated
3/4 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, melted

In a large bow, sift together the all-purpose flour, baking soda and salt. In a separate bowl, combine together the plain yogurt, granulated sugar and egg yolks. Gently add moist ingredients into the sifted flour ingredients. Stir in the melted butter. In a small bowl, beat the egg whites until they are light and foamy, fold the egg whites into the batter. Spray a large skillet with nonstick cooking spray and heat up the skillet over medium heat. Pour in 1/4 cup of batter at a time and cook pancake for 3 minutes on each side until golden brown.
