As a busy mother, grandmother and wife, I don't have hours to spend in my kitchen every night preparing healthy meals for my family. To solve this problem, I look for recipes that take less than 1 hour from start to finish and ones that utilize healthy fresh ingredients. The following white rice recipes are healthy dishes and take less than 45 minutes to make. Time Saving Tips: If you want to cut down on preparation time, you can chop all of your vegetables the night before and place them in sealed containers in your refrigerator. You can cook up your white rice the day before, drain away the water and refrigerate until you are ready to use it. Lemon Rice Pilaf Recipe 1 cup celery, chopped 1 cup onions, chopped 2 tablespoons light butter or margarine 3 cups white rice, fully cooked 1 tablespoon lemon rind, finely grated 3/4 teaspoon table salt 1/2 teaspoon ground black pepper Cook rice according to package directions and drain. In a large skillet, saute your celery and onions in butter until tender. Stir in your rice, grated lemon rind, salt and black pepper. Continue simmering over low heat for 2 to 3 minutes or until its completely heated through. Serve immediately. Spanish Rice Recipe 1 tablespoon vegetable oil 1/2 cup white rice, uncooked 1 can condensed Italian-Style tomato soup 1 cup water 1 bay leaf 1/8 teaspoon ground black pepper dash of hot pepper sauce In a large saucepan, add your vegetable oil and turn your burner to medium heat. Stir in the rice and cook until browned, stirring often with a nonstick silicone spatula. Once it has browned, stir in the canned soup, water, bay leaf, black pepper and a dash of hot pepper sauce. Bring heat up so that the mixture comes to a rapid boil. Reduce heat to low and cover the saucepan. Simmer on low for 20 minutes or until rice is tender. Remove bay leaf and serve immediately.
