When it comes to baking a cake for a special occasion, this Irish-Style cake with Ambrosia Icing is one of my favorite cakes to make. This cake is very rich and decadent...making it a perfect dessert. It would be appropriate for the holidays, special occasions or if you are hosting a tea party with a few friends. Irish Cake Recipe 3 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon table salt 3 cups granulated sugar 1 cup butter or margarine (I prefer using butter) 6 large eggs 1 cup milk In a medium sized mixing bowl, sift together the all-purpose flour, baking powder and salt, set aside. In a large mixing bowl, beat together the granulated sugar, butter or margarine, large eggs and milk until the mixture is creamy and smooth. Slowly beat in the flour mixture until all of the ingredients are well combined. Lightly spray a cake pan with nonstick cooking spray. Pour the batter into the pan and bake in a preheated 350 degree oven for approximately 40 to 45 minutes. Do not over bake the cake. Remove from oven and let completely cool. Ambrosia Icing Recipe 1 lb. bag flaked coconut 1 1/2 tablespoons orange peel, finely grated 1 cup of whipped topping 1 egg white, lightly beaten 1 cup confectioner's sugar In a large bowl, beat together the grated orange peel, whipped topping, egg white and confectioner's sugar until well blended. Gently fold in the flaked coconut. If your icing needs more firmness, add in an additional 1/4 cup of confectioner's sugar. Refrigerate for 10 minutes and then gently apply it to the top of your cooled cake.
